From Tree to Table: Our Harvesting Process

From Tree to Table: Our Harvesting Process

October 13, 2025Matt Sherrer

At Moon Lake Pecans, every pecan tells a story of care and craftsmanship. For five generations, our family has worked the rich soil of the Mississippi Delta, blending tradition with attention to detail. The result is simple: pecans that aren’t just food—they’re part of our heritage.

So how do our pecans go from orchard to your table? Here’s a look behind the scenes:

  • Shaking the Trees – Mechanical shakers gently loosen ripe pecans without harming the trees.

  • Collecting – The next day, we gather the pecans from the orchard floor, fresh and ready.

  • Sorting – Hand-sorting removes leaves, sticks, and imperfect nuts.

  • Drying – Pecans are carefully dried to preserve their natural flavor and crisp texture.

  • Cracking – A two-step process cleanly frees the nut meat from the shell.

  • Shelling – The pecan halves are separated from shell fragments.

  • Sorting Again – A second pass ensures no shells remain.

  • Aspiration – Airflow removes lightweight debris like dust for a final polish.

  • Final Inspection & Packaging – Only the very best pecans are sealed and prepared for you.
